Baked Garlic Chicken

This is a great and super easy recipe I'm excited to share!

(Adapted from Food.com)

Servings: 4
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

4 Chicken Breasts
6 Garlic Cloves (minced)
6 Tablespoons Brown Sugar
1 1/2 Tbsp Olive Oil
1 1/2 Tbsp Beer Can Chicken Seasoning (or any other seasoning of your choice)


Instructions:

1. Preheat oven to 450°F.  Line a glass baking dish with aluminum foil and spray with cooking oil.  Place chicken breasts on foil.
2. Saute garlic in olive oil. Remove from heat.
3. Add brown sugar and seasoning to garlic and mix well.
4. Spread mixture over chicken breasts.
5. Bake uncovered for 25-30 minutes.

Baked Parmesan Chicken


Now that I'm an official Stay-at-Home Mom, my husband kindly informed me that cooking is a great way to use up some of my free time.  So I've been trying some new recipes and have found some really good ones.  This is probably my favorite so far. I serve it with grilled asparagus and corn on the cob.  (recipe adapted from MyKitchenEscapades)

Servings: 4
Prep Time: 5 min
Cook Time: 45 min
Total: 50 min

Ingredients

4 Chicken Breasts
1/2 cup Mayonaise (I used light)
1/2 cup Plain Greek Yogurt
1 1/2 tsp Lawry's Seasoning Salt
1/2 tsp Pepper
1 tsp Garlic Powder
1/2 cup + 1/4 cup Shredded Parmesan Cheese


Instructions:
1.  Preheat oven to 375 degrees and grease a 9x13 glass pan.
2. In a bowl, mix together all ingredients except the chicken and extra 1/4 cup cheese (you will use this later).
3. Place chicken breasts in glass pan and spread mixture over all chicken breasts evenly.  Sprinkle remaining 1/4 cup of cheese on top and place in the oven. 
4.  Bake uncovered for 45 minutes.

White Chicken Chili

Fall is here and there's nothing better than some great cold weather meals!  Here is one of my favorites. It's great on a cold fall day with a side of corn bread.  It's super easy and quick!

2 cups navy beans (or other small white bean)
1 large onion
32 oz reduced sodium chicken broth
3 cups cooked chicken (I use rotisserie chicken and pull it)
4 cloves garlic (chopped)
2 tsp oregano
2 tsp cumin
1 tsp cayenne pepper 
7 oz chopped green chilies

Toppings:
1 cup sour cream
2 cups shredded cheese (I use Mexican blend)
1 large avocado  


Saute onion and garlic.  Add beans, broth, chicken, green chilies and seasonings.  Simmer for 20 min.  Add shredded cheese, sour cream and sliced avocado to each individual serving.  Serve with corn bread (optional).
