Ingredients:
1 Yellow Squash - cut to bite size1 Zucchini - cut to bite size
4 Red Potatoes or 1 Sweet Potato - cut to bite size
3/4 cup Cherry Tomatoes - halved
1 cup Baby Carrots - halved long ways
4-5 Cloves of Garlic- halved
1/2 cup Mini Onions - halved
1 tbsp Olive Oil
1/2 cup Parmesan Cheese (or more if you're feeling cheesy!)
Instructions:
1. Preheat oven to 350 degrees.2. Place all vegetables and olive oil in large ziploc baggie and shake well to cover veggies with oil.
3. Place veggies on a baking sheet and bake for 35 minutes.
4. Remove from oven and sprinkle with parmesan cheese. Return to oven and bake for an additional 10 minutes.
